Scouting Report
Schrock fits the profile of the bona fide high school quarterback prospect. Standing 6-foot-4, he has no problem seeing over his offensive line, and he has a great arm for slinging the ball downfield. From time to time Schrock even operates the veer option play, using his 210 pound frame to punish defenders.

In 8 games as a senior, Schrock completed 117 passes for 1,634 yards (14 yard avg) and 9 touchdowns. LINK

not a bad walk on.
From the videos looks like he throws a nice ball. Not a lot of arm strength but he gets it downfield. Throws a catchable ball and looks like he doesn't mind fitting it into spaces. Looked like they ran a lot of spread so he is going to have to adapt to play from under center. Isn't fast but looks like he moves pretty well.
Could be a raw talent with room to develop. At worst may help us out in the depth department and be a good scout team QB preparing for teams that run a lot of spread.

Now if he walked on why isnt he on the roster? Or is he just not on it yet?
I don't believe the roster has been updated to include the incoming players. Probably be a couple months. Even then, it's usually not accurate on the official site until the season gets going. They're notoriously slow at adding in the guys who join the team after rosters expand once camp is over.
